How embarrassing!  As you can see, I haven’t really been too inspired to write too much in the past eight months.  Let alone actually start this so-called “blog” and tell others about it.  Well…now is as good of a time as any to start. 

With having the entire summer off from teaching, I have the option to either get a monotonous part-time job, or to babysit for children I love, and do several fun, random jobs.  Can you guess which I chose?  One of these jobs is organizing the home of one of the families at my school.  The family is amazing, but with three children under five years old, and not a whole lot of extra time, their house tends to be a bit scattered.  Not dirty.  Just hectic.  Thus, knowing how I love to organize, sort, and plan, the mother has appointed me to help create a harmonious, orderly system for their home.  As ‘Martha Stewart’ as this may sound, I am super excited!

As I put together my design catalogue, and make a shopping list for The Container Store and Ikea, I thought it may be a good idea to continue with what inspires me: writing (among many other hobbies).  In the upcoming days, prepare for some more posts.

Edible Art October 25, 2009

One of my most favorite things in the entire world is to cook.  I love everything about it.  I have always loved everything about it, but it wasn’t until about three years ago that I got really into cooking.  Er, experimenting in my overcrowded 100 square foot kitchen is more like it.

I love the way you can use your imagination to create food edible art.  I love how there are so many different herbs and spices that can completely make (or break) your creation.  Experimenting to find out what types of food can be paired is a risk every cook should take.  How would you know dark chocolate and oranges taste delicious together if you never tried it?  Or crisp, bright green Granny Smith apples with some creamy brie cheese?  Do you remember when you were a child, and you would have a PB&J on white bread?  How nostalgic is that?

Some of my most favorite recipes are those I have created on my own.  Other times I will take a recipe and completely distort it to make it my own.  Every once in a while it will be complete crap, but most of the time it is delectable.

One of my favorite recipes is my citrus chicken with asparagus.  It is something that doesn’t take much time to prepare, and is a major crowd pleaser.

 

Citrus Chicken with Asparagus

 

4 boneless-skinless chicken breasts

1/2 lb. asparagus

2 lemons – zest & juice

2 oranges – zest & juice

2 limes – zest & juice

1/2 c. extra virgin olive oil

4 crushed garlic cloves

1 tsp. rubbed sage

1 tsp. dried rosemary

salt & pepper for seasoning

4 pieces of 12″x12″ parchment paper

 

Serves four people.  Oven is to be preheated to 400* F. 

Place chicken breasts in a large bowl.  Add the zest from all citrons, oil, herbs, garlic, salt and pepper.  Cut one lemon, one orange and one lime in half.  Squeeze juice from both halves in the bowl as well.  Incorporate all ingredients really well.  Cover, and place in refrigerator for a minimum of 20 minutes, up to 4 hours.

Thinly slice the remaining orange, lemon and lime.  Place chicken in parchment paper, add asparagus.  Add a few slices of each on top.  There will be leftover juice in the bowl, pour on top of each piece of chicken and asparagus.  Fold parchment paper at the sides, and at the top so all juices will remain inside.  Continue for all 4 pieces.  Cook for 45 minutes – 60 minutes.  Delicious as it is, or paired with orzo, rice, or pasta.
